Kevin goes back in time with this menu as he cooks up a Smoked Chicken Terrine. Fresh leeks from the garden are used with some delicious Gubbeen cheese for an indulgent Potato Gratin. Kevin heads to the beautiful Fort William Estate in Co. Waterford to catch some fresh water trout and cooks it up with some cured bacon and almonds.

In this episode Kevin goes lobster fishing off Hook Head and makes oven baked lobster with Dalkey mustard cream sauce. He also visits the kitchen garden in Dunbrody House which is run by Irene Kelly and makes potato pie with a puff pastry crust. He then makes seared fillet beef and blue cheese salad; a waldorf celeriac salad and apple tart.
